WHAT IT IS
The Private truffle ground of Cusona: fourteen hectares of poplar, hazel and willow woodland — the truffle’s symbiotic trees — recognized as a controlled truffle ground since 2012. The work centers on the white truffle when the season is right, but the estate’s truffle changes with the calendar: the prized white in autumn, the scorzone in summer, the bianchetto in spring.
It begins with the truffle hunter and his dogs, in the woods on the Estate. The return is to the medieval cellars, restored in 1881. Five selected wines, a selection of local dishes touched with a note of truffle, the estate’s own extra virgin olive oil.
